Turkey Lettuce Wraps

These lettuce wraps are one of my favorite dinners to make. I love eating veggies in a non-traditional salad and this recipe fits the bill. Anytime I make this when we have guests over, every single person asks for the recipe. It's delish, it's different, and it looks so yummy and pretty when you are done.

Ingredients:

Turkey Filling:

  • 1lb Ground Turkey
  • 2 garlic cloves minced
  • 1/2 onion chopped
  • 1-2 inch section of Ginger minced
  • 1-2 Tbsp Sesame Oil
  • 1-2 Tbsp Rice Vinegar
  • 1-2 Tbsp Honey
  • 1-4 Tbsp Soy Sauce (or if using liquid aminos, use less)
  • 1 Tbsp Sesame Seeds
  • Optional ingredients: Mushrooms, Bamboo Shoots, Water chestnuts 

Carrot Daikon Slaw

  • 2-3 Carrots Julienned 
  • ~6-7 inches of Daikon Root Julienned
  • 1/2 tbsp Sesame Oil
  • 1-2 Tbsp Rice Vinegar
  • 1-3 Tbsp Asian Vinaigrette Dressing

Peanut Butter Sauce

  • 1-2 Tbsp Peanut Butter
  • 1-2 Tbsp Rice Vinegar
  • 1/2-1 Tbsp Sesame Oil
  • 1-2 Tbsp Soy Sauce
  • Garlic & Onion Powder to Taste
  • Juice from 1/2 Orange
  • Optional: Spicy Garlic Paste

Lettuce Wraps:

  • Butter Lettuce - I use Living Lettuce then I plant the leftover stock in the garden & get new leaves
  • Optional Toppings: Avocado, Tomato, Sprouts, Green Onion, Siracha

Directions:

Make Carrot/Daikon Slaw first to let it marinate 

  • Julienne Carrots & Daikon
  • add vinegar, sesame oil & dressing to tawste
  • Mix & let sit in the fridge to marinate while you make the rest

Turkey Filling

  • Add Sesame Oil to pan on medium high heat
  • Add Onion, garlic & Ginger
  • Brown Turkey once the onions become translucent
  • Add Mushrooms (if using)
  • Add each ingredient little by little to taste: Soy Sauce, Rice Vinegar, Honey, Sesame Seeds
  • Optional: add black pepper, powdered garlic, ginger or onion to taste
  • Add Water Chestnuts, & Bamboo Shoots just before everything is done

Put it all together:

  • Take a butter lettuce, add turkey filling, top with carrot/daikon slaw, add peanut sauce. ENJOY!

Options:

  • Use extra firm tofu instead 
  • Use Cucumber instead of Daikon 
  • You can always use Hoisin Sauce instead of Honey
