Summer time just reminds me of fresh fruit, crisp veggies and sunshine. Plus the fact that I try to eat a salad a day, this recipe is something that can be easily adjusted to fit whatever you have in your fridge (or your garden!)
Ingredients:
Salad:
- 1-2 Cups of Greens - I love a combination of spinach, kale & romaine
- 4-5 Cherry Tomatoes
- 1 TBSP of Pumpkin Seeds
- 3-4 Ounces of Chicken
- Half a Peach, diced
- 1 Shredded Carrot
Lemon Vinaigrette Dressing:
- 3/4 Cup Extra Virgin Olive Oil
- 1 Medium Lemon, Squeeze (~1/4 Cup)
- 1/4 Cup Apple Cider Vinegar
- 1 Garlic Clove (or garlic powder to taste if in a rush)
- 3 Tbsp Dijon
- Salt & Pepper to taste
- Optional: Sprinkle of dried basil, oregano and/or thyme
Directions:
- Place all dressing ingredients in a mason jar. Mix vigorously, set aside for 10 minutes while you prepare the rest.
- Add greens & carrots in a bowl, mix with desired amount of dressing
- Sprinkle with tomatoes, seeds, peaches
- Top with Chicken
