Summer Salads

Summer time just reminds me of fresh fruit, crisp veggies and sunshine. Plus the fact that I try to eat a salad a day, this recipe is something that can be easily adjusted to fit whatever you have in your fridge (or your garden!)

Ingredients:

Salad:

  • 1-2 Cups of Greens - I love a combination of spinach, kale & romaine
  • 4-5 Cherry Tomatoes
  • 1 TBSP of Pumpkin Seeds
  • 3-4 Ounces of Chicken
  • Half a Peach, diced
  • 1 Shredded Carrot

Lemon Vinaigrette Dressing:

  • 3/4 Cup Extra Virgin Olive Oil
  • 1 Medium Lemon, Squeeze (~1/4 Cup)
  • 1/4 Cup Apple Cider Vinegar
  • 1 Garlic Clove (or garlic powder to taste if in a rush)
  • 3 Tbsp Dijon
  • Salt & Pepper to taste
  • Optional: Sprinkle of dried basil, oregano and/or thyme

Directions:

  • Place all dressing ingredients in a mason jar. Mix vigorously, set aside for 10 minutes while you prepare the rest.
  • Add greens & carrots in a bowl, mix with desired amount of dressing
  • Sprinkle with tomatoes, seeds, peaches
  • Top with Chicken
